Cheese wax stabilizes moisture in the desired range to properly age the cheese. Although there are many other cheese coating options available, cheese wax is one of the best choices because it is breathable and holds shape easily. Follow this step-by-step guide to learn how to use cheese wax.
1. Gather your supplies
You’ll only need a few supplies to coat the cheese:
- Block of cheese wax
- Cheese you are coating
- Heat source
Also, remember to wear Personal Protective Equipment (PPE), including gloves and safety glasses.
2. Melt the wax
Put the cheese wax in the container on the heat source to begin melting. Keep a gradual heating rate while melting the wax by monitoring it with a thermometer. For best results, keep the wax temperature consistent once it is melted. Melted wax should stay between 160℉ and 170℉.
3. Remove excess moisture
You need to remove any excess moisture that may have accumulated on the cheese before dipping it. If you don’t remove all the moisture, the wax won’t adhere to the cheese properly. We recommend using a lint-free cloth to gently pat the cheese dry.
4. Dip the cheese
It’s easiest to dip the cheese in sections. Hold the wheel of the cheese on one side, and dip half of it in the melted wax. For best results, hold the cheese in the wax for a few seconds to allow the wax enough time to adhere. After a few seconds, remove the cheese from the wax, and let the excess wax drip off back into the container. Set the half-covered wheel of cheese down, and wait for the wax to harden. The wax should harden within 15-20 seconds. Once the wax is hardened, repeat the process with the uncovered half of the cheese.
After the second half of the cheese wax hardens, your cheese will be ready to store and age.
