Cheese wax is used to protect cheese during the aging process. Although there are other coatings that can be used, cheese wax is the best because it is breathable, fast drying and holds its shape easily.
If you plan to coat your cheese in wax, follow these tips.
1. Melting The Wax
You’ll need a container, a thermometer, a heat source and the wax to get started. Also, wear personal protective equipment, including gloves and safety glasses.
Keep a gradual heating rate while melting the wax by monitoring it with the thermometer. For best results, keep the wax temperature consistent once it is melted. Melted wax should stay between 160°F and 170°F.
2. Remove Excess Moisture
Before dipping your cheese in the wax, you need to remove the excess moisture that may have accumulated on it. It’s important to remove the moisture otherwise the wax won’t adhere to the cheese. Use a lint-free cloth and gently pat the cheese dry before dipping.
3. Dipping The Cheese
It’s easiest to dip the cheese in sections. Hold the wheel of cheese on one side and dip half of it in the melted wax. For best results, hold it in the wax for a few seconds to allow the wax enough time to properly adhere to the cheese. After a few seconds, remove the cheese from the wax and let the excess wax drip off. Set the half-covered wheel of cheese down and wait for the wax to harden. Once the wax is hardened, repeat the process with the uncovered half of the cheese.
